Tip - throw your mushrooms into a sauce 5 minutes from the end of cooking, and chop into big chunks. They'll retain their texture and flavour so well. Tip #2 - for garlic mushrooms, cook in a little oil first, and once cooked - THEN add your garlic butter. It won't all get lost in the 'shroom that way!
